ReMARKable Palate Podcast #41: Bobolink Dairy and Career Transitions for Chefs

It's the return of my greenmarket coverage, with a new regular feature, the Greenmarket Report. Today I interview Jonathan White of Bobolink Dairy (www.cowsoutside.com), who was selling his artisanal cheeses and breads at the Union Square Geenmarket. Following that interview is a phone conversation I had with a chef who's considering a career change.

CPN - Food Philosophy #8

Food Philosophy #8: Lavender Love

During my trip to LA last week I headed into the Santa Ynez Valley with Steve Wasser to explore some wineries, and we stumbled upon a beautiful lavender farm, Clairmont Farms. After I got over the swooning, I knew it was time to grab a handful of buds and bake that Lavender Pound Cake with Lemon Glaze from the Gilded Fork test kitchen (the one I've been dying to taste). We're taking a departure from my normal show format, so join me in the kitchen for a bit of mixing, baking and mess-making. And lest anyone is entertaining the myth that I'm a food snob of epic proportions, this will demonstrate that I, too, have my own blunders and mishaps in the kitchen. It all makes for a nice helping of fun and merriment, methinks, particularly when served with a hearty tablespoon of food porn from my mother.

Food Philosophy #7: Chef Thomas Keller

Thomas Keller joined me for a chat on food philosophy and what that means in the world of the French Laundry and its siblings. His perspectives on food are some of the most well respected in the industry, and with good reason, as his passion for cooking has helped to elevate American cuisine to a new place in the international landscape. He also shared some interesting thoughts on the world of celebrity chefdom, seasonal vs. local cuisine, and his new life as a jet-setting restaurateur.

Welcome Cuisine From Spain to the CPN Family!

We are thrilled to announce that Cuisine From Spain, hosted by Marina Diez, is the newest member of the Culinary Podcast Network. Marina brings an authentic cultural and culinary voice to her show, offering us history and instruction on many of the classic regional dishes of Spain. She breaks the recipes down in a simple, easy to follow style, and her charming Madrileña accent is the kind of voice that makes you want to listen all day!

Cuisine From Spain is part of the Notes From Spain family, along with Notes From Spain, hosted by Marina's husband Ben Curtis, and Notes in Spanish, which is, as the name implies, a podcast where Marina and Ben converse in Spanish.

Ben is an expat Brit who has lived and worked in Spain for the past seven years. There, he met and fell in love with Marina, and is now an auditory ambassador for his adopted country.

Congratulations to Jean-Louis Gerin

Our good friend Jean-Louis Gerin won a James Beard award last night as Best Chef in the Northeast for his restaurant Jean-Louis in Greenwich, CT.

We were among the first to congratualte him at the Pellegrino sponsored after party at the Westin Hotel in Midtown, where he wore his newly minted medal with humility, while those around him tried to get him to display it even more prominently.

Stay tuned for an in depth recap of all the weekend's festivities and other award winners.

We will also be publishing an in-depth profile of Jean-Louis in our Behind the Toque section at The Gilded Fork.

Food Philosophy #6: Taste Memory

What is taste memory? How does a food experience indelibly etch itself in our minds, evoking triggers sometimes years later? Even more intriguing, how do mental impressions of food have the power to evoke fantasies, or physical reactions within us?

While scientists delve into the research, some chefs are on a mission to use food as a mind trigger to create a richer eating experience. Chef Mark joins me for a chat on Jean-Louis Gerin's recent sensory tasting dinner, and to share some favorite taste memories. (And yes, we want you to share yours, too.)
