CHIC Podcast #140: Great Wines with Value

Chef Mike Skuca and I were talking about the excellent wines you can get for under 10.00 at Trader Joes. We decided to do a podcast on, not cheap wines, but wines that have great value. We are joined by Chef Karyn Hofoll, a great wine lover in her own right. We talked about a lot wines on the podcast but we drank a bottle of King Shag from Trader Joes. I think you'll like the wine and the podcast. Thanks for listening! Have a great week!

CMN - RP158: A Taste of Taos

ReMARKable Palate #158: A Taste of Taos

This week, I share with you two hidden gems I discovered on my recent trip to Northern New Mexico. First, we'll hear from Charlotte Ritchie-Slater from the Ritchie-Slater winery in Black Lake, New Mexico, the state's only producer of fruit wines. Charlotte's wine are characterized by a fresh, floral dryness, unlike so many cloyingly sweet fruit wines. We then speak with Chef Frederick Muller, food historian and proprietor of El Meze, a Moorish-inspired restaurant in the historic El Torreon Hacienda in El Prado, just outside of Taos. He tells us just how North Africa influenced many of the traditional foods of Northern New Mexico.

ReMARKable Palate #145: Marsala Wine

Today's show is an audio soundseeing tour of Florio, the legendary producer of Marsala wine, in the town of Marsala, in the province of Trapani, on the far western coast of Sicily. Our guide Marcello tells us about the history of this historic winery, which has been in operation since 1833, where some of the casks still have 100 year old wine in them! Listen with earbuds, since I recorded this with binaural microphones, and you'll get the full stereo soundseeing experience.

ReMARKable Palate #143: Finger Lakes Wine Region

This week, it's all about the food and wine of the Finger Lakes Wine Country, just a few hours north of New York City. I attended a tasting at New York's Astor Center, the state of the art tasting room above Astor Wines, where I got a chance to taste a number of Rieslings from the Finger Lakes paired with nibbles prepared by some of the region's best chefs. In addition, we learned about many of the fun activities on offer in the region, from sporting, to car racing, and of course, the heritage museums of Central New York.

CHIC Podcast #86: Sparkling Summer Wine

When do you serve sparkling wine? I have to say I always put it in the celebratory category. Chef Karyn Hobfoll and our own dining room manager and teacher, Susan Beard came by to set me straight. We opened a bottle of Karyn’s favorite Cava and had a discussion. Of course it was for educational purposes.....it didn’t hurt that we had fun too. You can join us as we talk about opening some sparkling wine in the summertime. Thanks for listening.
