The Five Stages of Wine Self-Education

In the course of putting on wine dinners, attending and hosting wine tastings, and generally just drinking wine in public, I end up talking a lot with people about wine. Increasingly, many of those conversations are turning towards the subject of “wine education.” This means different things to different people, but in general, from novice to expert, people seem to want more of it. They're not necessarily clamoring for their neighborhood stores to start holding classes, or for me to start an online wine university, but they are frequently asking me: “How can I learn more about wine?”

After getting over my initial mild embarrassment of being considered an authority on all things wine (yes, I’m still not quite used to it), I have typically answered the question by telling people there’s nothing wrong with taking classes if they’re that interested. Mostly I find myself suggesting that the easiest thing is to simply taste a lot more wine; but I’ve come to realize that while this is a simple way for me to answer the question, it’s only barely useful. I mean, c’mon, my day job is as a business consultant, right? I should be able to provide a little more structured approach for those who are interested in applying themselves to the subject.

Without further ado, then, I present my point of view on the stages through which any wine drinker should pass on their (deliberate or accidental) path towards being a serious student of wine, whatever that means for them. One can begin at any stage, and remain at any stage indefinitely. Some journeys never get past the first, while others determinedly progress to the last; but if you’re serious about it, this is the path I recommend taking. If you’re not serious about it, then perhaps it’s enough to know which stage you are in, and to be content with that. (read more)

This week, I share with you two hidden gems I discovered on my recent trip to Northern New Mexico. First, we'll hear from Charlotte Ritchie-Slater from the Ritchie-Slater winery in Black Lake, New Mexico, the state's only producer of fruit wines. Charlotte's wine are characterized by a fresh, floral dryness, unlike so many cloyingly sweet fruit wines. We then speak with Chef Frederick Muller, food historian and proprietor of El Meze, a Moorish-inspired restaurant in the historic El Torreon Hacienda in El Prado, just outside of Taos. He tells us just how North Africa influenced many of the traditional foods of Northern New Mexico.

In addition, we learned about many of the fun activities on offer in the region, from sporting, to car racing, and of course, the heritage museums of Central New York.

WtWC: Winemakers and Their Pinots


Yesterday we visited with several Pinot producers at Pinot Days in San Francisco, www.pinotdays.com and tasted a few of their wines. (Podcast(s) soon!) Today I’ll fill you in on their food-pairing suggestions—and we’ll also tie up a few loose ends from earlier posts.

Let’s start with the pink stuff! Quite a few of the winemakers at Pinot Days also produce a rosé of Pinot Noir, and we all agree that it’s one of the most food-friendly wines on the planet. Milla Handley (founder/proprietor of Handley Cellars in Mendocino County and a frequent guest on CPN, www.handleycellars.com) enjoys hers with everything from roast chicken to Asian food (“not too spicy!”) to pork to “just plain sipping with cheeses.” In the South of France, she noted about a recent trip, they drink their rosé with everything, including lamb. Her astute summary of Pinot rosé: “It’s the essence of Pinot without all the oak… you’re getting the fresh-fruit flavors of Pinot Noir, and it’s really versatile with a lot of things.”

Ramona Nicholson of Nicholson Ranch www.nicholsonranch.com also makes a wonderful Pinot rosé—“delicious, refreshing, and dry,” and she too finds it tremendously versatile. With her husband Deepak, Ramona recently hosted a winemaker dinner featuring Indian food, and she singled out their pairing of tandoori chicken with the Pinot rosé. Although the wine isn’t actually sweet, it’s fruity enough to balance off the spice—“almost like chutney in a glass!”

While I was in between Pinot-tasting tables, I ran into Ty Mahler, the executive chef at Roy’s in San Francisco. www.roysrestaurant.com We agreed that Pinot Noir is an excellent red-wine candidate for the Asian, East-West and “Hawaiian Fusion Cuisine” specialties that are the hallmark of the Roy’s “restaurant family.” Chef Ty made my mouth water as he described an innovative seafood entrée on his current “specials” menu, with a Bing cherry, goat cheese and Pinot sauce. Pinot is one of his favorite wines too; like me, he loves it with fish as well as meat, and we shared stories while we waited to taste at the next table.

There, Craig Haserot of Sojourn Cellars www.sojourncellars.com described an “Asian spice” component in his Sonoma Coast Pinot. (Craig, like Milla Handley, is a CPN regular: see Chef Mark’s videocasts from Pinot Days New York, as well as several of my upcoming Welcome to Wine Country podcasts.) When I mentioned that I love to pair Pinot with Chinese take-out roast duck, he grinned. “Duck, as most of my friends know, is one of my favorite foods,” he said, agreeing that the Asian spice on the Chinese-style duck and the Asian spice “that’s (also) aromatically present in the Sonoma Coast (Pinot)” make a truly great match.

Now for the “loose ends.” First, about the food-pairing ideas from the SF International Wine Competition: www.sfwinecomp.com In random conversations, several fellow judges and I kicked around some thoughts about what would taste good with the wines we were tasting. (At this point, you may recall, all we knew about any given wine was its varietal/vintage.) Rosemary lamb for the slightly herbaceous Cabernet. Meaty braised shanks in spiced tomato sauce for the brawny Petite Sirah. Duck with berry sauce for that jammy Zin. Steak with mushrooms for the black-peppery Pinot. (Guess we were hungry…)

The second loose end is Prosecco. www.prosecco.it But instead of looking at food pairings for it now, why don’t we save ‘em for next Friday, the eve of Bastille Day—an ideal time to talk about bubbles. I’ll fill you in on some great matches for Champagne and other sparklers, including the tasty Prosecco that we’ve been enjoying together this past week. Meanwhile, as always,

Chef's Table: Sparkling Wines Around the World

No one can dispute the global dominance and reputation of true Champagne from France. The classic Méthode Champenoise accounts for some of the best wines in the world. There are also sparkling wines produced in other parts of the world using the French method, and American, Chilean, and Australian producers have been producing them for the past several decades. While most call themselves sparkling wines, some unscrupulous (mostly American) producers actually call their wines Champagne.

However, in other parts of Europe, home-grown sparkling wines are indeed produced, and they have their own unique characteristics. The Spanish have Cava, The Italians Prosecco and Spumante, and the Germans Sekt. Each has distinct methods for production, as well as grapes native to its respective country. (read more)

Welcome to Wine Country!

If you’ve been following Jennifer’s Food Philosophy and Chef Mark’s ReMARKable Palate on the Culinary Podcast Network, my voice may already be familiar to you – especially when the topic is wine.

I’m Rosina Tinari Wilson, and I’m excited to join the CPN with “Welcome to Wine Country” – the podcast that explores the world of wine from an insider’s perspective. I’ve been involved with wine – judging, writing, consulting, and of course tasting – for over 20 years. (Before that, I studied biochemistry, so brace yourself for the occasional “wine science geek” tidbits that I’ll be tossing into the mix.)

I live in a wine (and food!) paradise, halfway between San Francisco and the Wine Country of northern California. With the vineyards and wineries of Sonoma, Napa, Mendocino and more practically at my doorstep, I get to keep track of what’s going on in the world of wine. And now, with a swirl, sniff and sip, I’ll be bringing it all to you.

You’ll be hearing podcasts of my vinous adventures, such as winery visits and interviews, “theme” tastings that feature wines of a particular type or from a particular area, and professional wine competitions where I smuggle you right into the judges’ “inner sanctum.” (That’s where we decide who gets the gold medals!)
