SHF #37: Thanksgiving Harvest
Just a quick post to ensure I make it in time for this month's Sugar High Friday....
Hosted by the incredibly creative Leslie of Definitely Not Martha, the theme of the 37th SHF was Beta Carotene. A monthly event created by Jennifer of The Domestic Goddess over two years ago, Sugar High Friday is an event to celebrate all that is sweet in our lives. Thankfully, this event came in perfect timing with the holidays, as pumpkin pie is a staple at our table. However, I decided to switch it up this year and use a recipe I learned from work. This challenge was also a clever way of sneaking extra vegetables onto our holiday table.
I made two desserts for my family's Thanksgiving feast:
*Sweet Potato Tart with hazelnut crust and candied hazelnuts
I admit, the recipe for filling came from my boss. However, I used this crust recipe, which I was not happy with. The dough was too soft, and the crust bottom never baked entirely crispy, resulting in a soggy bottom once the filling was baked.
2. Pumpkin Financiers
I took my basic financier recipe and tweaked it until I came up with a worthy pumpkin financier.
4 whites
1/2 c butter
1/2 c butter
1 1/2 cups powdered sugar
1/2 cup almond flour
1/3 c cake flour
salt
3/4 cup pumpkin
Use this recipe and just follow the instructions for the Rosemary Corn Financiers.
And, please excuse my lack of photos...the poor camera is being repaired. I did take photos using my cell phone, but I am a technological twit and cannot figure out how to upload them to my computer...
I simply love the Autumn harvest.
